Pepsin is a digestive protease secreted by the gastric chief cell in the stomach. It breaks down food proteins into small peptide fragments. The main cell secretes pepsinogen, which is stimulated by gastric acid or pepsin to form pepsin, which is not produced directly by the cell.

Application

1.Protein processing

The protein solidified by gastric acid is decomposed into peptone but not further decomposed into amino acids. Its digestibility was strongest with 0.2% ~ 0.4% hydrochloric acid (PH=1.6 ~ 1.8).

2.Food Industry

Enzyme preparation. Mainly used for hydrolysis of fish meal and other proteins (such as soy protein), milk coagulation in cheese manufacturing (combined with rennet), also used to prevent frozen turbidity of beer.

3.Medical Industry

Pepsin can be used as a digestive aid. It is often used for the deficiency of pepsin and other symptoms caused by chronic atrophic gastritis, gastric cancer and pernicious anemia. However, it is forbidden to be used with alkaline drugs or mercaptan drugs.
